Pickled vegetables recipe, (How to make Toursi)

minutesThis side dish is often served as part of a meze (varied small appetiser size dishes). Easy to make and holds for a very long time in a freezer.
Fermented foods add good bacteria to the gut. These good bacteria help to do many things like strengthen the immune system and regulate appetite.
Ingredients
2 large red peppers
3 – 4 large carrots
½ medium white cauliflower
½ celery
bunch celery leaves
½ small cabbage
3 tablespoons salt
3 cups white vinegar
1 cup canola oil
water (enough to cover a large pot)
Instructions
- Cut vegetables to about 3cm in length.
- Fill a large pot with water and bring to boiling point (over high heat).
- Add salt, vinegar and canola oil.
- Turn heat off and add vegetables including celery leaves covering in boiled water.
- Next day slowly add vegetables into sterilised jars (ensure a mixture of vegetables in each jar).
- Top up jars with water brine and store in the fridge.
