This side dish is often served as part of a meze (varied small appetiser size dishes). Easy to make and holds for a very long time in a freezer.

Fermented foods add good bacteria to the gut. These good bacteria help to do many things like strengthen the immune system and regulate appetite.

Ingredients

  • 2 large red peppers

  • 3 – 4 large carrots

  • ½ medium white cauliflower

  • ½ celery

  • bunch celery leaves

  • ½ small cabbage

  • 3 tablespoons salt

  • 3 cups white vinegar

  • 1 cup canola oil

  • water (enough to cover a large pot)

Instructions

  • Cut vegetables to about 3cm in length. fermented vegetables
  • Fill a large pot with water and bring to boiling point (over high heat).
  • Add salt, vinegar and canola oil.
