Ingredients for fried rockling recipe
- 1 – 2 fillets of rockling.
- Cornflakes crumbs.
- Salt & pepper.
- Cornflower.
- Canola oil.
- 2 Lemons.
Instructions for fried rockling recipe
- Prepare rockling fillets by washing and paper towel drying.
- Soak in cornflour (mixed with water in a bowl).
- Cover fillets in cornflakes crumbs.
- Pour canola oil into the frying pan (enough to cover the fillets).
- Cook on high heat and add the fillets when the oil sizzles.
- Cook on each side for 10 minutes or until tender.
- Place fillets on a paper towel when cooked.
- Add fresh lemon juice and salt and pepper to taste.
- Serve it with a garden salad on the side.
The salad ingredients I used in the photo are:
- Cherry tomatoes.
- Fennel.
- Rocket.
- Spring onion.
