Fried beef liver recipe (Sikotakia tiganita), the perfect meze

minutesAn easy to prepare starter which will impress your guests. This starter is often served as part of a meze (varied small appetiser size dishes). Served with ouzo or a glass of crisp white wine.
Ingredients
1 kg beef liver
1 tablespoon salt
1 teaspoon pepper
1 tablespoon oregano
½ cup plain flour
canola oil (for frying)
lemon wedges
Instructions
- Cut beef livers into small pieces.
- Apply salt, pepper and oregano over livers.
- Turn livers over, ensuring salt, pepper and oregano coats both sides of the livers.
- Lightly apply plain flour on both sides of the liver, setting aside.
- In a shallow pot, add canola oil and fry livers, turning over until cooked through.
- Apply cooked livers on a paper towel to soak any excess oil (up to 5 minutes).
- Serve with lemon wedges or your favourite dipping sauce.
