This starter is often served as part of a meze (varied small appetiser size dishes). Served with ouzo or a glass of crisp white wine. Ingredients 1 kg beef liver1 tablespoon salt1 teaspoon pepper1 tablespoon oregano ½ cup plain flour canola oil (for frying) lemon wedges Instructions Cut beef livers into small pieces. Apply salt, pepper and oregano over livers.Turn livers over, ensuring salt, pepper and oregano coats both sides of the livers.Lightly apply plain flour on both sides of the liver, setting aside.In a shallow pot, add canola oil and fry livers, turning over until cooked through.Apply cooked livers on a paper towel to soak any excess oil (up to 5 minutes).Serve with lemon wedges or your favourite dipping sauce.
