minutesA very easy recipe only requiring a few ingredients. Topped with glazed cherries, walnuts or almond flakes. These biscuits are a different take from the classic meringue macaroons more delicate in texture.
These biscuits are very popular and can be found in many Greek bakeries. If you want to try something quick and easy then these delights will impress.
Ingredients
500 g shredded coconut
3 eggs
1 cup caster sugar
1 cup melted butter (unsalted)
½ cup self-raising flour
1 shot ouzo
- Chocolate flavoured macaroons
2 tablespoons drinking chocolate
1 tablespoon melted butter
1 tablespoon hot water
- Macaroon toppings
glazed cherries (green/red)
walnuts
almond flakes
Instructions
- Preheat oven to 180* C.
- Add 3 whole eggs to the mixer and beat thoroughly.
- Add shredded coconut and mix through thoroughly.
- Add caster sugar, melted butter, flour and mix through thoroughly.
- Make ball-shaped macaroons and place on a baking tray lined with baking paper.
- Add the mixture of glazed cherries, walnuts and almond flakes to the top of the macaroons.
- For chocolate flavoured macaroons add two tablespoons drinking chocolate into a shallow bowl and combine 1 tablespoon melted butter and 1 tablespoon hot water.
- Mix through thoroughly and add the chocolate mixture to macaroon mixture, combining both ingredients.
- Make ball-shaped macaroons and place on a baking tray lined with baking paper.
- Add almond flakes to the top of the chocolate macaroons
- Bake macaroons for approximately 15 – 20 minutes or until macaroons turn golden brown.
