A delicious Greek vegan treat. Greek biscuits – Olive oil cookies recipe, (Ladokouloura)

hourThese cookies are simple to make and are normally made during the lent (fasting) periods. The cookie dough is softer and oilier than many other of our recipes and when baked these delights are delicious.
We sprinkle a mixture of cinnamon and sugar over the dough before baking whereas traditionally these cookies are sesame coated. It is the perfect companion with your next coffee or tea. Scented with aromas. such as orange, cinnamon and clove.
Ingredients
2 cups white sugar
2 tablespoons nuttelex (olive spread)
1 cup walnuts (ground)
2 cups olive oil
2 cups soda water
2 Kg self-raising flour
1 tablespoon coriander powder
1 teaspoon cinnamon powder
1 clove clove powder
1 shot ouzo
sesame seeds (optional)
Instructions
- In a mixing bowl, add nuttelex (olive spread) beating over low speed.
- Slowly combine 1 cup olive oil and 1 cup sugar.
- Increase mixer speed to medium, allowing the mixture to combine.
- Slowly add the rest of the olive oil and sugar.
- Add soda water.
- Allow mixture to thoroughly combine, adding one-shot ouzo.
- Add clove, cinnamon and coriander powder.
- Combine grounded walnuts, increase mixer speed to high, allowing the mixture to combine.
- The mixture will turn into a creamy texture.
- Turn mixer on low speed, gently combining flour.
- Stop mixing process, combining the rest of the flour, mixing ingredients manually using your hand until the mixture comes together.
- In a shallow pot over medium heat add water and combine 1 cup sesame seeds bringing to boil occasionally stirring sesame seeds.
- Drain water, retaining sesame seeds, setting aside and allowing to cool (this step ensures sesame seeds stick to dough mixture)
- Roll out dough forming into biscuit shapes using the method demonstrated in our video demonstration starting at 5:40 until 5:55, repeating this process until all of the mixture has been utilised.
- Combine sugar and cinnamon and sprinkle over biscuit dough alternatively cover biscuit dough with sesame (thoroughly).
- Bake biscuits @ 180-C for 60 minutes or until biscuits are cooked through.

- The sesame seed step(s) are purely optional.
- Nuttelex is an Australian olive spread. It is made with natural Olive oil, with 70% less saturated fat than butter and 50% less salt than regular margarine.
